The best thing to do is ride along the coast
Definitely check out the West Orange Trail! I believe it’s just been extended, but you should be able to get at leadst 60 miles out of it.
I’m not a cyclist so keep in mind, but A1A runs along the coast for most of the northeast part of Florida, it’s beautiful, lots of dunes and ocean views, along with a few high rise areas. The Ocala National park has great scenery mostly forrest and lots of beautiful clear fresh water springs to stop and snorkel at if you are into that sort of thing. If you are traveling south towards the keys I imagine that would be nice as well if you stay close to the beach but I’m not familiar with the roads down there. Have fun and come prepared for the heat and humidity!

Not surprisingly with as much “congestion” as there is in Orlando proper – their aren’t many long trails in the area.
All of the above, but beware that A1A is a “regular” road with cars, traffic lights and typically no bike lane or shoulder.
Check out the Pinellas Trail: it’s about 50 miles long and rides up and down Pinellas county (Tampa Bay = St.Pete/Clearwater/Tarpon Springs = about 1 1/2 hours from Orlando).
Another awesome ride is Jupiter Island: start at the Jupiter Inlet and go to Hobe Sound(about 2 1/2 from Orlando).

Be careful, Florida drivers have no respect for cyclist.
