Most definitely you have to go to the Kennedy School. Totally amazing. You can either stay there overnight, or just go for dinner and beers.
We wanted to go to the Bagdad Theater but we didn’t get a chance to.
Also, Powell’s Books is outstanding.

PDX has a lot of neat neighborhoods with lots of stuff to do like eating at cool restaurants, bars, seeing a movie, and shopping. Some of my favorite neighborhoods include Mississippi St., SE Hawthorne, Hollywood District, and NW 23rd Ave. Powell’s Books and Kennedy School are a must. Take a walk along the promenade on the Willamette River in downtown. If you can get out of the city, check out many of the great hikes and waterfalls along the Columbia River Gorge. Also, check out a AAA baseball game as well.

If you like the outdoors, you could hike through Forest Park, which is right in the city. Or you could check out Multnomah Falls along the Columbia River.

Spend a day visiting waterfalls in Multnomah, especially, hike up Oneonta Gorge to Oneonta Falls.
Visit Powell Books.

Go to Powell’s Books and the Saturday Market. Walk around SE Hawthorne, NW 23rd, and NE Alberta. Take a day to drive up the gorge, stopping at Multnomah Falls and some of the others on the way. Walk along the waterfront. Go Washington Park and Council Crest and enjoy the views. Go to any of the McMenamins and drink. Catch a festival at Waterfront Park. Take a day trip to the coast, or visit wineries near McMinnville.

Definitely visit the Japanese Gardens. They are arguably the best in all of the U.S. It’s a beautiful, peaceful place with stunning views of Mt. Hood on a clear day. I would recommend taking the free docent tour to better understand and appreciate Japanese symbolism and aesthetics.
Just down the hill is the Rose Garden, a completely different type of garden, but interesting for its contrast.

Ditto for visiting the Japanese Garden, it’s really quite beautiful. The traditional Chinese Garden in Chinatown is also nice.
To reiterate what others have recommended, Voodoo Doughnut and Powell’s are awesome!
Get some pizza at Apizza Scholl’s.
