If you go west of Honolulu to Ko’Olina, there is a great luau called Paradise Cove Luau. The VIP package ($99 per person, I believe) is great!!! They have a website, too.
The best diving and snorkeling we experienced was in Maui, though, so I can’t recommend anything in Honolulu.
We stayed at the JW Marriott Resort ( www.ihilani.com ) which is right next to Paradise Cove and I can’t say enough good things about that resort!

There’s a restaurant in downtown Honolulu called Ciao Mein. It’s a mixture of Chinese and Italian cuisine. As weird as that may sound, it is SO good.
