I haven’t done much hiking in Catalina, but I have really enjoyed touring the Casino. If you enjoy history and gorgeous deco architecture, that’s the place to go. Also, it’s a real working movie theatre (be sure to see if they’re having any special events when you arrive; there’s an annual silent movie festival, for example), making it a memorable place to catch a film.
Also, rent a golf cart. It’s a fun way to tour Avalon.

One more thing… I never go there without ordering a buffalo burger. They’ve been an intrinsic part of Catalina’s identity since a herd was left there from an old western movie (and have since taken over the landscape… the population actually has to be thinned), and they’re much tastier than beef!

Snorkling is a must-do in Catalina, if the weather is warm enough. The fish there are amazing, and the water is so clear and clean. You can rent the snorkle equipment from many vendors along the shore near the green pier. It’s also nice to do the glass-bottom boat trips.
I agree that the casino is also really important.
