My favorite was the Chatuchak Weekend Market in Bangkok – set aside a whole day for this one, it’s HUGE. Great for meandering around.

Definitely go to the small island of Koh Chang near the Cambodian border and stay at the Treehouse bungalows. Also, Railay near Krabi is beautiful and Koh Phi Phi is worth a visit. I’d skip Phuket. If you head to Chiang Mai/Rai be sure check out the small town of Pai. I’ve heard great things! I agree with Chiang Mai — book a hill tribe tour. It’s amazing.
I also recommend the Full Moon Party (or half moon, or black moon — best is Full Moon though) on Koh Pha Ngan, a Thai Island right above Koh Samui (30 min ferry ride north). Every backpacker you meet will be headed there for the a few days before and after the Full Moon. It’s a can’t miss spectacle.
All the above are great however we loved getting a guide in Chang Mai and taking a jeep, then a boat, then treking through a bamboo jungle, then spending the night with a hilltribe people who did not have electricity and had a very rural “old time” lifestyle, participating in a Chinese News Years Dance with them and watching them go about their lives among the pigs and families at the village, having the little girls and moms give us a Thai massage for a dollar, taking a jeep ride away and then riding an elephant to another village. It was a great experience to go back in time with another culture.
I could live in Chiang Mai, Chaingmai, Chiangmai, whatever its name is! Great food on the streets, great massage school (ITM). Must see, plan to spend some time and immerse yourself in the second largest city in Tland, but still has plenty of charm and close to cool outlying areas.
All the responses you received are all very good ones, but I can tell you something that not many people really know about and that you should check out.
I studied abroad there 2 years ago for public health and we were introduced to the man, Mechai Viravaidya, The Condom King. Look him up. He’s one of the most important person in Thailand as he educated MANY about safe sex and provided services that are very much needed in that country. My colleagues and I had the privilege to meet him in person. He’s a very smart and funny man. He gave a presentation in one of his 3 chain restaurants there, called Cabbages and Condoms. It was awesome. Good food, lounge area, foot massage area, and gift shop (which the proceeds are donated to the HIV organization). Also, the whole restaurant is decorated with condoms.
