I wouldn’t necessarily suggest Florianópolis these days if you’re seeking peace and quiet. The city is becoming a very well-known (and sought after) touristy place in the high season and more and more people are moving in to capitalize on the tourism money and as a way of working and having fun at the same place.
Lucky for you, the Santa Catarina state has a very good structure (and tradition) for farms and ranches if you get away from the coastside and head to the Itajaí Valley.
I would consider either Lages or any of the cities from the Itajaí Valley and then if you’re interested in nightlife, resorts and good restaurants just stay as close to the Santa Catarina coast as you can, as you can have the best of both worlds within a 2-hour drive.

well, what ‘spicee’ said is true. i was born in Florianopolis and i just start living here again (after 2 years in the UK). and what i can tell you is that i feel safer in London than here.
though as you’re planning to have a small farm. not far from here you can check SANTO AMARO DA IMPERATRIZ and surroundings (AGUAS MORNAS). there are some hot water springs there. a good place to relax, among the hills (where you can go paragliding) or close to the river (where you can do some rafting) if you got bored.
i would suggest you as well to have a look at GAROPABA. it’s another beautiful place where you can have a farm next to the sea. some people prefer to have a property up on the hill to enjoy the fresh air and the amazing view. and if you like surfing that’s the place to be.
