Jnane Mogador and Riad Hamza are both near Djeema al Fna the main square. They’re both good value, clean and cheap and the staff are really helpful. Jnane Mogador also has a spa, and if you’re feeling flush book out the Mogador suite which has an amazing bathroom! Breakfast isn’t included in the cost here but it is at Riad Hamza. Best to book in advance, I was there over New Year and even although it was quiet both were almost fully booked.

We tried to book into a lot of the places mentioned in the other answers too, they get really good reviews in Lonely Planet etc but we left it too late and ended up staying in the Riad Al Faras. I would recommend this place though, it is close to the Djemma el Fna, cheap and really friendly and just gorgeous inside. The staff are so helpful and friendly and the food is great.

We stayed at Ryad Mogador Menara …
Food was terrible and so was the service (for a high standards hotel that is …)
The Club Med seemed very well located but I have no clue on prices
You should check how close they are to the Djemma el Fna because it is about to be the place you will hang out more often … and there is nothing worse than trying to find a cab to get you out of there off to your hotel after having spent few hours in the souk (market) ... so a hotel near by will be very nice …
You are off season so you will have half prices on almost all hotels … you can even bargain in smaller hotels …
Enjoy you stay !!

Hotel Essaouira, close to Djemma el Fna. It was cheap and clean—about 140-150 dirhams a night, if I recall correctly. Shared toilet but sink inside the room.
There were a lot of backpackers at the hotel, so it was a bit loud at night but on the plus side, a great place to meet other travellers.
The hotel is south of the square, and not in the middle of the souks so you don’t have to dodge aggressive storekeepers to get there (a big advantage I found after 3 days in the city). Plus there’s a nice hammam very close by the hotel.

Congrats on your trip! Maroc is lovely… if you’re looking to backpack, check out Hotel Afriqua or Hotel Chellah. are you looking for something more upscale? Lonely Planet is a great source for places. I also have some friends that can show you around if you need. Best!
