This may sound a bit scary as an answer, but honestly some of the best places you will come across to eat are the little family owned, hole in the wall types on the side of the highways.
But as for a place with a name I highly recommend Ed Walkers in Fort Smith. The food is bit on the greasy side and the hamburger is a bit expensive, but it is all worth it.

I travel a fair bit for business and am always looking for those family owned restaurants you mention.
In my opinion, corporate-owned food establishments, in striving for quality consistency and cost efficiency, just don’t have any passion for cooking simple, good, honest food. And without the passion, there is little flavour to enjoy.
I’ll put Ed Walkers on the list!

The place in Arkansas to get the best BBQ would be on the Ark River in a little town called Ozark. It’s called Rivertown Barbeque. I know I sound kinda biased(hometown) but its great. If you going during the busy hours lunch 12-1:30 take a number, sign your name on the waiting list and step into the line…quite literally it’s that good. (Goes for the suppertime too) It is worth the wait, though. I’d recommend going in the afternoon for a late lunch-early supper. Their brisket sandwiches are bar none the best. It has a really great atmosphere as well.

Next time we visit Arkansas, we’ll try your suggestion. On our last trip, we enjoyed both Bubba’s and Guido’s in Eureka Springs.
Guido’s slogan “Walk-in, waddle out” was so appropriate.
