Lindsborg is really about the last thing you’d expect to find in the middle of Kansas. It’s small and culture-packed with heavy Scandinavian influence (they call themselves Little Sweden). I used to like to think that it was a lot like a European town, and after actually going to Europe this summer, I was happy to find out that it really is. There’s a collection of quality restaurants – Stockholm Restaurant and Teas, The Cookery, The Courtyard, and the soon-to-be-reopened Swedish crown, for a few. And nothing can compare to Lindsborg’s shops for Christmas shopping. There are several unique festivals each year that are fun, laid back, and not quite like anything you’ve ever seen (and the food is not quite like anything you’ve ever tasting – try a revered Viking on a Stick).
Also it’s in the Flint Hills, which is basically the only pretty part of Kansas. Coronado Heights is one of the most beautiful places I’ve ever been to. I go to Lindsborg fairly regularly, and I’m still finding places that I’ve never seen before.
