My fave Roman restaurant by Paola
… that has sported for decades the very – errr – spartan décor (and service… har har har) of a Roman trattoria, has been recently totally refurbished.
I was quite shocked to see such a landmark transformed in something suspiciously resembling to what a New York architect considers the very essence of a posh Tuscan trattoria, and who gives a damn if it’s a Roman trattoria!
Anyway I had to give them a chance, since their tonnarelli cacio e pepe are one of my “don’t miss” in Rome. And, in spite of the terrible new atmosphere and the fact that so many tourists were there, they still are the best in Rome.
I just hope they’re not going to refurbish the chef.
The old Felice would be soooo upset!
