McFoster's Natural Kind Café

Last winter, I planned to attend a concert in Denver with a few friends, and to get there we would be driving through Nebraska, a state I’d never been in before. On advice from one of my friends in the Twin Cities who had been in the area before, we stopped for lunch at this restaurant not knowing what to expect. In the end, the delicious meal was one of the highlights of the trip, particularly the tempeh sandwiches. It was certainly a good way to fortify ourselves for the long haul across the plains to Denver. It was really surprising that a vegetarian/vegan eatery such as this existed in what I had assumed to be the middle of beef country.
