I spent a month in the Oaxacan countryside many years ago. What an experience. Some of the best meals I’ve ever had were cooked over an open fire in an adobe kitchen—freshly-made salsa, black beans, chocolate drink, turkey eggs, and those huge handmade corn tortillas.
