Kind of depends on where you are going to be in Ireland. Cashel has a great little hostel, Dublin is filled with ecclectic inns and Galway has some fantastic B&Bs.

I really haven’t decided on an itinerary yet. At this point I’m thinking I’ll rent a car and after a few stops in Dublin, I’ll head out of town and pick a few places to spend time and putter around. So far I’m just putting out feelers to everyone I know for recs and then I’ll somehow narrow it down to what I’ll be able to experience during this trip to give me a good taste but not have me running all over the place.

Definitely enjoy Dublin for a day or two. This site will point you in the right pub direction: http://www.hidden-dublin.com/
Depending on what you are looking for, I would suggest either a drive down to Kinsale via Cashel (great food in Kinsale, Cashel is just oddly quaint) or drive across to Galway (or perhaps Cork w/o kissing the Blarney) for more drink/social (with a possible excursion south to Doolin for trad music if you are into it).
Either way, I am jealous. Have a blast and grab a Murphy’s for me.

Just Google “Ireland riding centres” and see what happens. I stayed somewhere not too far from the airport, and they offered horse-riding, but they needed to know you wanted to ride in advance. Since I was only spending the night, I didn’t ride, and I wish I could remember the name of the place… but I’m sure there are plenty of places to choose from.
Have a great trip!
