(1) Do the full-day boat excursion around the caldera. You get to see and do alot in one day: climb the volcano, swim in the natural mud baths, seaside lunch on Thirassia, and you wind up docking below Oia, where you can either walk up or (for a few extra euros) ride a donkey. You have some time to wander around and see Oia, and then you can easily make your way to any number of scenic viewpoints to watch the sunset. (One word of warning – Oia is THE place where tourists go to watch the sunset, so it can be pretty crowded, it’s a good idea to stake out your viewing location early).
(2) If you can afford it, stay in one of the quaint little caldera-view villas…and then allow yourself time to just sit and drink in the beauty of one of the most spectacular places on earth!
(3) Try the tomato keftades (fried tomato balls) – a delicious local specialty.
