Thanks! I’ve actually booked a room now, at the LKF by Rhombus (hope it’s any good!), on a recommendation from a local.
As for things to visit, do you have any suggestions? We’ll be staying for four full days and nights and are open to anything. We just want to see as much as possible and experience the geist of HK to the fullest extent imaginable.
So…I’m open for ideas!

1 day needed for Lantau Island..
First take MTR (subway) to Tung Chung,
then take skyrail http://www.np360.com.hk to Ngong Ping.
It will spend 2-3 hrs there at Ngong Ping & the Big Buddha

You can taste vegetable meal at the Po Lin Monastery.

to Tai O to experience our fishing town.
next day visit the peak, if u like to walk for 1.5 hrs, you can pick the peak walk for a nice Victoria harbour view http://www.discoverhongkong.com/eng/touring/hkwalks/ta_walk_walk8.jhtml or walk down to HK University.
At night, Causeway Bay is nice place to get crowed which live through our speedy city. If still have time before dinner, get into Island South town – Stanley. It’s nice place to relax and take shots.
